Creminis are picked when they are full-grown and ready to harvest. Death caps are picked when they are immature and before they turn brown. Black trumpets are picked when they are mature and ready to harvest. Fly agarics are picked when they are ripe and ready to harvest. Mushrooms are often eaten raw or sauteed. They can also be added to soups, stews, casseroles, salads, sandwiches, pasta dishes, pizza toppings, and desserts. When choosing mushrooms, look for ones that are firm and moist. Avoid mushy mushrooms as they may not be fresh. Also avoid mushrooms that are bruised or discolored. To store mushrooms, wrap them individually in plastic bags and refrigerate them for no longer than five days. If stored properly, mushrooms should keep well for several months.
